Ingredients

– 8 ounces of spaghetti or linguine

– 4 slices of bacon, diced

– 2 cloves garlic, minced

– 1/2 cup heavy cream

– 2 eggs, whisked

Cook the pasta according to package instructions—Reserve 1/4 cup of the cooking water before draining.

– 2 tablespoons olive oil

– 1 tablespoon lemon juice

– Salt and pepper to taste

Directions

Cook the pasta according to package instructions—Reserve 1/4 cup of the cooking water before draining. Place the cauliflower florets in a steamer basket over boiling water and steam for 10 minutes or until tender. Transfer to a food processor or blender.

 

Add the cashews, garlic, nutritional yeast, olive oil, lemon juice, and salt and pepper. Process until smooth and creamy. Place the cooked pasta in a large bowl and pour the sauce over it. Toss to combine until noodles are fully coated. If it’s too thick, add some reserved cooking water.

Directions

Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

 

Boil lasagna noodles according to package instructions. Drain and set aside. Heat olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 3 minutes or until softened.

 

Add the ground beef and cook until browned (about 5 minutes). Add the marinara sauce and bring it to a gentle simmer. Reduce heat to low and cook for 10 minutes, stirring occasionally.
